Dry-powder inspection and a standardised preparation in water are useful parts of matcha evaluation. They create a consistent baseline for dry-powder colour, aroma, visible uniformity, obvious foreign matter and the basic sensory profile. They stop short of showing how a powder will perform in a dairy beverage, biscuit, frozen dessert or packaged RTD product.
Finished-product approval requires evidence from the target formulation and process. A powder can look promising in a sample bowl yet become too subdued in a high-fat matrix, create an unwanted texture after processing or produce a different colour once the product has been baked, frozen or held for service. The decision turns on whether the candidate meets the project requirement in the product that will be manufactured.
Keep the Baseline Tests, but Define Their Role
Dry-powder review can identify obvious differences in colour tone, aroma, agglomeration and sample condition before material enters a formulation. A water preparation can then provide a less complex comparison of tea intensity, bitterness, astringency, umami, mouthfeel, foam and visible settling.
These results depend on preparation. An article on matcha sensory evaluation published in the *Japanese Tea Research Journal* separates dry appearance from attributes assessed after preparation and specifies the sample, water and whisking conditions used in that method. The article supports direct matcha evaluation; food factories still need an application-specific release procedure.
Preparation differences can also change the comparison itself. A 2024 study in *Current Research in Food Science* found differences in measured aroma, taste and compounds when two matcha samples were prepared under different agitation conditions. Its experimental settings do not define an industrial mixer programme. The result demonstrates why fair comparison requires consistent concentration, temperature, mixing tool and mixing time.
A useful baseline protocol therefore identifies the sample and lot, powder quantity, water quantity and temperature, mixing equipment and time, evaluation order and observation interval. This creates a repeatable reference while leaving product approval to the finished formula.
The Product Matrix Changes What the Trial Needs to Answer
Formula components actively reshape matcha performance. They alter the background against which colour, aroma, bitterness, astringency and texture are perceived, while also changing the physical behaviour of dispersed leaf material.
In a dairy or plant-based beverage, opacity, inherent colour, protein, fat and sweeteners can change finished colour, tea intensity and mouthfeel. A published matcha milk tea study examined one dairy and stabiliser system, illustrating how powder, base and suspension design interact. Another beverage still requires its own formulation and process work.
Bakery products create a different evidence trail. Research on matcha shortbread found changes between dough and baked biscuits, while a separate gluten-free muffin study found different colour responses in raw batter, the top surface and the crumb. A development team therefore needs to examine both the unbaked system and the finished product under its own oven programme.
Frozen products require evaluation after freezing and at the target serving condition. One study of ice cream made with green tea powder found changes across physical and sensory characteristics as the experimental formulation changed. The study illustrates that green tea powder becomes part of the frozen-product system rather than controlling tea intensity alone.
Acidic fruit systems add another distinct set of interactions. A 2026 berry-and-matcha study compared formulation and extraction conditions in an aqueous system. Commercial smoothie development still needs the actual fruit ingredients, ice, temperature and process represented in the trial.
Control the Trial Before Comparing Candidates
A comparison is only useful when the matcha is the principal variable. Candidate powders should enter the same formulation at the same initial inclusion rate, using the same ingredient batch where practical, equipment, order of addition, process settings and observation times. Blind sample codes can reduce the influence of supplier names, grade labels and price during the first sensory comparison.
The trial sheet should capture:
- matcha identity and lot;
- formulation and process version;
- inclusion rate and method of incorporation;
- observations before, during and after the relevant process;
- finished colour, aroma, taste, aftertaste and texture at the target evaluation condition;
- application-specific behaviour, such as dispersion, settling, bake response, freezing response or melt behaviour;
- any additional handling, loss or corrective processing associated with the candidate.
Changing several ingredients and process settings at the same time obscures the comparison. A first controlled screen can identify the most relevant options. Later trials may adjust inclusion rate, formulation or process deliberately, with each change assigned a new version.
Build Evidence in the Order Required by the Decision
A practical staged process moves each candidate from a simple reference into the commercial conditions that matter:
Material baseline. Note powder appearance, aroma, uniformity, agglomeration and sample identity under consistent conditions. This stage identifies obvious mismatches or sample issues.
Standardised water reference. Compare the core sensory and physical profile using one documented preparation. This provides a reusable reference for sample discussion and later lot comparison.
Controlled finished-product trial. Place shortlisted candidates in the target formulation and process while holding the other variables constant. Evaluate the product at the point that matters commercially: after service hold, baking and cooling, freezing and tempering, or another defined condition.
Scale and package confirmation. Where the project requires it, move the preferred option into the planned equipment, operating sequence and package. Additional storage, transport, microbiological, regulatory or shelf-life work depends on the product and market and remains a separate validation responsibility.
The sequence keeps each result in its proper role. A water reference supports comparison, a laboratory formula supports product development, and a plant trial supports scale-up. Destination-market and shelf-life work remain separate.
Link Approval to the Tested Version
Finished-product evidence needs a clear identity. The approval file should connect the matcha sample or lot with the formula version, process version, inclusion rate, equipment or scale, evaluation condition and responsible reviewers. Procurement and quality can then develop purchasing criteria from the attributes that matter to the project.
This linkage also helps diagnose disagreement. A strong water result followed by a weak finished-product result may point to the base, processing or evaluation condition rather than material quality. Conversely, a small difference in water may become commercially important after baking, freezing or service hold. Performance in the finished product remains the final criterion.
Detailed RTD processing and in-pack evaluation belong to the RTD development workflow. Incoming-material approval, supply execution and cost-in-use belong to the manufacturer qualification decision.
