Selecting Bulk Hojicha Powder for Drinks, Bakery and Ice Cream

Treat hojicha powder as a separate roasted-tea ingredient and evaluate roast character, brown colour, powder behaviour and finished-product performance in each application.

Hojicha powder may appear beside matcha on a beverage or dessert menu, but it is not brown matcha and has no place on a matcha grade ladder. Japanese tea references distinguish matcha, made by finely grinding tencha, from hojicha, produced by roasting teas such as sencha or bancha. Labelling requirements vary by destination market, but the category distinction is commercially important.

The role of hojicha powder is not to reproduce matcha’s vivid green appearance or umami-led profile. It brings roasted aroma, a brown to reddish-brown colour profile and practical powder-handling questions such as incorporation, dispersion, settling and mouthfeel. Performance varies by application. Testing therefore begins with the product brief, not with a single claim that one powder is suitable for everything.

Define the Target Roast Profile

“Strong hojicha” is not a sufficiently precise development target. Depending on the product, the target roast profile may emphasise a clear tea aroma, a gentle toasted note or a deeper roasted character that remains distinct after processing. Bitterness, astringency, sweetness, finish and finished-product colour should be scored separately.

Peer-reviewed studies of roasted green tea show that roasting process and degree can change volatile compounds, chemical composition and aroma characteristics. Selected pyrazines and other volatile compounds also vary across the roasting treatments examined in those studies. These findings support a clearly defined target roast profile rather than a universal temperature, time or “best roast” for commercial hojicha powder.

Light and deep roast descriptions are sensory and application choices rather than quality ranks. Stem-based and leaf-based hojicha should also be evaluated in relation to the actual raw material, roasting approach and finished product. None of those names establishes superiority on its own.

Treat the Powder as a Production Ingredient

Grinding introduces questions that are not answered by the roast description. Candidate powders may differ in wetting, dispersion, visible settling, the amount and character of sediment, mouthfeel, dusting and caking in the pack. Finer powder does not automatically deliver a better product, and a powdered tea should not be described as completely soluble.

Procurement and R&D can first compare dry-powder appearance, target roast profile, visible uniformity and pack condition. Shortlisted powders should then enter the actual formulation with powder and liquid quantities, order of addition, mixing equipment, processing time and observation points held constant. Any extra sieving, pre-mixing, filtration or rework belongs in the trial sheet rather than being treated as an invisible laboratory adjustment.

Drinks Require Aroma and Dispersion to Work Together

A commercial hojicha latte is a complete beverage system. Meiji’s official product information for its Tsujiri Hojicha Latte, for example, lists roasted tea alongside dairy ingredients, sugar, oils, stabilisers and emulsifiers. The example demonstrates one commercial milk-based application but offers no universal powder specification or evidence of stability in another formulation.

For made-to-order drinks, R&D should compare hot and iced versions separately while keeping the base, sugar level, inclusion rate, order of addition and mixing method consistent. Relevant observations include roast-aroma clarity, interaction with the dairy or plant base, sweetness balance, bitterness, astringency, powdery mouthfeel, foam and sediment at the bottom of the cup. A sample that appears expressive in hot water may be subdued by a cold, sweet or high-fat base.

An RTD project requires a separate process and package assessment. Production and quality teams should follow sedimentation, redispersion, in-pack colour and sensory performance after the planned homogenisation, heat treatment and filling sequence. A supplier’s application label cannot replace validation of shelf life or packaging performance. Where commercial sterility is required, it must be established for the complete product using the validated process, equipment and package.

Bakery Adds a Second Roasting System

Hojicha powder can be incorporated into baked products. A MUJI product example has described hojicha powder kneaded into baumkuchen, demonstrating a real bakery application without establishing a standard inclusion rate or roast specification for cakes, biscuits and breads.

Inside a bakery formula, the tea’s roasted character meets flour, sugar, fat, egg, leavening and the product’s own browning reactions. The aroma and colour observed in the batter may differ from those at the surface, in the crumb or after cooling. R&D should compare each stage against a no-hojicha control, helping separate the base product’s browning and toasted notes from the contribution of the tea powder. Aroma release, overall colour, sweetness balance, bitterness, astringency and finish can all change across those points. A darker result is not automatically a stronger or better hojicha expression, particularly when a processing difference may have created the colour.

Detailed heat-response and bakery-process work belongs to the individual product trial. The purpose of the ingredient comparison is to identify which candidates retain the target profile without turning one test formula into a universal specification.

Ice Cream Must Be Judged Cold and During Melt

Hojicha also has a documented place in frozen desserts. Morinaga Milk’s PARM Hojicha Latte combined Kaga bocha hojicha ice cream with a white-chocolate coating. That official example shows a roasted-tea concept in a dairy and chocolate frozen system while leaving the powder form, supplier specification and formula outside its scope.

Cold temperature, fat and sugar can alter how aroma and taste are perceived. Candidate powders should therefore be evaluated in the actual ice-cream base and freezing process rather than ranked by hot-water preparation alone. Useful observation points include the product straight from storage, the early softening stage and the melt. R&D can score roast-aroma definition, sweetness, dairy character, bitterness, astringency, powdery mouthfeel, scoopability, colour and uniformity at each point.

A powder that produces an intense hot infusion may not provide the clearest result in a frozen matrix. Conversely, a quieter hot-water sample may integrate more effectively with the actual dairy, plant-based or chocolate system. The application result, not the hot cup alone, determines the useful shortlist.

One Powder Need Not Cover Every Category

Using one material across drinks, bakery and ice cream may simplify inventory, but operational convenience should not decide the technical result in advance. Drinks place emphasis on incorporation, cup aroma and settling. Bakery adds thermal processing and product browning. Ice cream adds cold perception, frozen structure and melt behaviour.

Procurement can compare the same set of samples for identity, target roast profile, dry-powder appearance, basic handling and available lot information. R&D can then move the shortlist into separate drink, bakery and ice-cream workstreams. The selected material may be common across all three, or different applications may require different options.

This approach preserves a comparable starting point without allowing success in one category to conceal a weakness in another. It also keeps the decision connected to the planned production conditions rather than to a broad “multipurpose” claim.

Build the Hojicha Project Brief

A useful sample request identifies the product type, dairy or plant base, sweetness target, heat or freezing steps, target roast profile, target colour profile, expected pack format and target cost range. Initial comparisons should hold formulation and inclusion rate constant. Formula adjustment can follow after the shortlist has been established, with pilot-scale, packaging and storage validation reserved for the appropriate development stage.

The trial sheet should capture the sample lot, preparation sequence, equipment, processing conditions, photographs and sensory observations. Descriptions such as “for drinks”, “for bakery” or “for ice cream” are useful shortlist cues, not guarantees of heat resistance, freeze tolerance, absence of settling or a fixed shelf life. Before approval, procurement and quality should also confirm the specification, pack format, lot controls and destination-market documentation.
